What do you get when you make a fermented version of Pico de Gallo? Pico de Búho, of course. Pico de Gallo translates as "rooster's beak" in Spanish, so Kleverbelly's owl logo is the inspiration for Pico de Búho, or "owl's beak". It's reminiscent of the Pico you know, but with the added zip that only fermentation brings to a dish. The fermentation process is short, and you should eat it within a week or so of purchase, though you may enjoy the extra sourness that develops as you leave it in your fridge up to a couple months. Ours never lasts that long, alas...
