Pronounced PEEK-oh day BOO-oh (owl's beak). A fermented take on the fresh, chopped pico de gallo you may know. Not a cooked or blended salsa that pours, it's chunky and spoonable, made with tomatoes, onions, peppers, garlic, and cilantro. It has a brighter, tangier flavor than fresh pico thanks to natural fermentation rather than added vinegar or sweeteners.
